Now that summer has finally arrived, it means we can dust off our BBQs and get grilling! However, sometimes we can’t help but feel that what we’re cooking on the BBQ isn’t always the healthiest, nor are the sides we prepare to go with it (it’s safe to say potato salad isn’t the healthiest of salads). But we’ve come up with some of our favourite BBQ recipes that are super healthy and lean, ensuring you won’t feel as though you’re over indulging in the lead up towards your summer holiday! Turkey burgersHomemade Turkey Burger on a Bun With less fat than a beef burger, these are a great substitute when you’re trying to be good! Ingredients
  • 500g turkey mince
  • ½ finely diced onion
  • 1 egg
  • 1 crushed garlic clove
  • Salt & pepper to season
Method In a medium sized bowl mix together all the ingredients with your hands and then form into 4 individual patties. Before heating your BBQ grill, spray with a non-stick BBQ spray. After heating the grill place your patties straight on the grill for approx. 20 minutes turning half way through. Serve in a wholemeal bun with tomato, onion and lettuce! Rainbow saladOrganic Super Food Vegetarian Salad Sometimes salads are best kept simple. This super easy and colourful salad is the perfect accompaniment to any grilled meat or fish! Ingredients
  • Bag of kale
  • Lettuce
  • Sliced yellow & red tomatoes
  • Sliced cucumber
  • Diced avocado
  • Sliced red & yellow pepper
  • Olive oil
  • Lemon
Method Mix together the kale, lettuce, tomatoes, cucumber, avocado and peppers into a large salad bowl and drizzle with olive oil and lemon juice! Non-alcoholic apple & elderflower fizzsummer drink Elderflower Lemonade A delicious summer drink the whole family can enjoy. Ingredients
  • 50ml Elderflower cordial
  • 500ml cloudy apple juice (not from concentrate)
  • 1l Sparkling water
  • Handful of fresh mint leaves
Method In a large pitcher/jug mix together the apple juice, mint leaves and elderflower cordial. Then top up with sparkling water. Serve chilled.
