Bruschetta

Bruschetta is easy and quick to make, plus the prep can be done hours before, making more time for entertaining BruschettaIngredients
  • 4 small slices of sourdough bread
  • 2 large tomatoes chopped
  • Half small red onion finely chopped
  • 1 clove crushed garlic
  • Olive oil
  • Balsamic vinegar
  • Sea salt
Method In a large bowl mix together the tomato, onion, garlic, olive oil and balsamic vinegar. Place the bowl in the fridge for at least an hour to let the flavours infuse. To serve, lightly toast the bread and serve the mixture on top of the warm bread.

Courgette Spaghetti

From a young age, we naturally associate eating spaghetti with romance thanks to the classic Disney film, Lady & The Tramp. However, spaghetti can sometimes feel like quite a heavy dish, so why not try our courgette Milanese recipe for a lighter, reduced carb version! Courgette SpaghettiIngredients
  • 2 courgettes (Zucchini) spiralised
  • 2 chicken breasts
  • 100g panko breadcrumbs
  • 2 chopped cloves garlic
  • 1 x 400g tin of tomatoes
  • 1 onion finely diced
  • 100g plain flower
  • 1 egg
  • Fresh basil
  • Grated parmesan
Method Heat a splash of olive oil in a sauce pan, then add the onion and garlic to soften. After a couple of minutes add the tined tomatoes and squash down the chunks with the back of your wooden spoon. Fill the empty tomato tin half way with water and add to the tomato sauce and leave to simmer until it has thickened. Whilst the sauce is simmering, take your chicken breasts; place them on a board with a piece of cling film over the top. Then bash them with a rolling pin until they’re roughing 5mm thick. Next coat each breast in flour, egg and lastly bread crumbs. Add the chicken breasts to a large pan with a table spoon of oil and cook for 5 minutes on each side. 1 minute before serving add the courgette to the sauce to heat through (the vegetable does not require cooking). Place the courgette in tomato sauce and chicken breast into a dish and serve with a sprinkle of parmesan and fresh basil leaves.

Frozen Berries with a hot chocolate sauce

This classic yet simple desert is always a hit. The contrast of the frozen fruit with the warmth of the chocolatey creamy sauce makes for a mouth-watering pudding! This may not be as healthy as some deserts but still better than a slice of cake. Frozen berrysIngredients
  • 250g mixed frozen berries
  • 100ml double cream
  • 100g white chocolate
Method Place the double cream and chocolate in a bowl over a saucepan of simmering water for about 20 minutes, stirring every so often until the sauce is hot and has no lumps of chocolate in it. 5 minutes before serving arrange the frozen berries on a dish to let them lose their chill and thaw slightly. To serve, place the dishes of berries on the table and pour the hot chocolate sauce over the berries at the table, and enjoy!
